All non-stainless steel blades will oxidize (or rust) if not cared for properly. Any light weight oil will work and should be applied after each use or if being stored. We recommend Olive Oil as it is not too heavy and is food grade (what what you put in your blade because it may end up in your mouth when processing meat).
To keep your knife properly sharpened it should only be stropped on leather or a fine whet stone to avoid removing too much material from the edge. A sharpening stone should only be used in the instance of severe dullness or damage. Keeping a knife sharp is easy but does take a little practice.
